Recipe Time!

I made these cookies last night, and hoo-boy, they are GOOD! Recipe found here.
Peanut Butter & Honey Cookies
Crispy on the outside & chewy on the inside!

1 stick unsalted butter, room temp
3/4 cups granulated sugar
1/4 cup honey
1/3 cup creamy peanut butter
1 egg
1 teaspoon vanilla extract
1 1/2 cups oats
3 Tablespoons all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

1.) Preheat oven to 350.

2.) Cream butter, sugar, and honey in the bowl of electric mixer, until light and fluffy.

3.) Meanwhile, mix together all dry ingredients.

4.) Add peanut butter, egg and vanilla to butter mixture. Scrape down bowl.

5.) Slowly incorporate dry ingredients into the wet.

6.) Drop tablespoon-sized scoops of dough onto lined cookie sheets, a few inches apart. Bake 12-13 minutes. (FYI - these cookies get HUGE, I was only able to bake 6 at a time without them running together on my cookie sheet).

7.) Let cookies cool COMPLETELY! They will crumble into pieces if you try to pull them off the baking sheet before they've cooled down. Thankfully, they are super thin, so it should only take 10 min or so for them to cool.

Makes 30-36 cookies.

**For all you dieters out there, each cookie is about 75 calories (with less than 1 gram of fiber).
