Happy April!

I never really expected myself to be the recipe sharing type when I got older... but then again, I also never thought I'd be married at 21 or graduating college with a major in communication.

Anyways, I made this a couple weeks ago and it's freaking delicious! So I dare you to try it and not like it. (If you really don't like curry, then you probably won't enjoy this.)

BBQ Curried Pork Chops

4 thick center cut pork chops
1 onion
2 cloves garlic
3 tsp. curry powder
1/4 c. lemon juice
1/4 c. maple syrup
1/2 tsp. pepper

Combine garlic, curry, lemon juice, maple syrup, and pepper in an 8x8 baking dish. Place the thawed pork chops in the dish, and put in the refrigerator for at least 2 hours (I recommend overnight.) When you're reading to cook the pork, slice the entire onion up into rings. Taking about 1/4 cup of the marinade out of the baking dish, add the onions and the marinade to the pan and grill for about 6 minutes. Add the pork directly to the onions. Grill pork in the frying pan for about 20-25 minutes (10 on each side). Make sure to cook on fairly low heat to avoid charring the pork.

I would recommend opening all the windows in your house so it doesn't smell like curry for a week!

PS - As some of you know, I'm training for a 5k next month. Well, I've never ran in my life, so it's been quite the task getting up to where I need to be for this race. But YESTERDAY I ran the full 5k for the first time since I started training! So yay!
